Howdy...Glad to be of help. No Texan would be caught without this recipe in their files! Enjoy
1/4 C. margarine
1 med. green pepper, chopped
1 med. onion, chopped
1 can cream of mushroom soup
1 can cream of chicken soup
1 can rotel tomatoes and green chilies, diced
2 C. cubed cooked chicken
12 Corn Tortillas, torn into bite size pieces
2 C. (8oz) shredded cheddar cheese
Preheat oven to 325 degree.
In a large saucepan melt margarine, then cook green pepper and onion until tender(about 5 min.)
Add soups, rotel, and chicken stirring until well blended.
In a 13x9x2" pan, alternately layer tortillas, soup mixture, and cheese repeat for 3 layers.
Bake 40 min.
