How long can you keep dried chile pasilla in your pantry? Is it still OK for cooking after a year or two?

I wouldn't think so. After about six months, even in air-tight containers, I have found the flavor begins to deteriorate. Not stale, exactly, but not as strong and a little "dusty". They are so inexpensive, I would just throw them out and buy a new batch.

Ric's right, but in those zones of the planet where pasillas are hard to come by, it's not always an easy matter to replenish the chile larder every six months.

I'd recommend keeping them in a plastic bag in the freezer. They'll keep around 2 years then....but then I've got stuff in my freezer dating back to William the Conquerer.
