¿ Buffets y Largas, Edo. GTO?

While riding the bus from Morelia to San Miguel de Allende, somewhere south of Celaya, we passed numerous buffet restaurants, neck to neck, cheek by jowl. There must be some other attraction there to have stimulated this buffet development. Might be the roadside tiendas selling all manner of stuff for the home and the kitchen.

Only slightly more puzzling were signs at other places advertising "largas" as well as quesadillas. Could it be a regional name for the "huaraches" antojito? Anyway, that's my guess.

(I may have confused these two places. The bus is swift and the towns not often named)

Maybe they´re huaraches for people with big feet :) !

According to Tere it seems your assumption is correct. She says largas are like sopes but folded, thicker than a normal tortilla to accomodate more fillings like meat and beans, etc. Huaraches, it seems, can be compared to quesadillas in the same manner and by her description sound the same.

Over breakfast Tere clarified once again on your largas question. She says they really are quesadillas but just the longer form. I don't see how that make the distinction about them if the restaurant you cite advertizes both quesadillas and largas unless it is just a matter of size. She leaves huaraches as being doubled-over and elongated sopes.

That Tere speaks practically no English and my Spanish is only marginally better we don't always understand each other on the first pass. That should make the answer to you question clear as mud. Should the rules of Mexican food be any more solid than the "standardized" rules at agency offices here?
