I need to know how to cook this rice. It is cooked the same way a long grain white rice. I want to cook it plain. What is the ratio to water or stock to rice? Looking forward to hearing from you.

Fill the pan with water, and add water to cover. Placing your thumb at the top of the rice, perpendicular to the plane of the rice, add more water (or other liquid) until it barely reaches your thumb's knuckle.

As with any rice dish, the proportions of total liquids to rice is 2 to 1. Two cups of stock or water or thinned tomato juice to one cup rice. Mexicans tend to cook rice (and pasta) a bit softer than al dente. If you prefer your rice dish firmer and slightly less authentic with separate grains, use less than 2 cups of total liquid. Halve or double this rule of thumb easily. ¡Buen provecho!

10 years ago I spent one year studying Basic Chinese Culinary Practices under the tutelage of a Master Chef born and trained in China. This method of proportioning water to rice was one of the very first Asian culinary practice taught to us. It's been the way of my kitchen ever since. Mrs. Chen explained this method as the way of the rural and agricultural folk back more than 100 generations. Today I say what I said back then: "Who am I to tell a Chino how to cook the rice?"

would that work with 12" of rice and 1" above of water .... I don't think so. It needs to be a pre-determined percentage
