I have a young man who comes in several times a week to do a heavy clean on my house and he also prepares comida. Last week he asked for pesos to go to the fruteria because he needed ingredients for arroz. I told him I had the rice, onions, tomatoes, tomato sauce, a rack full of seasonings, chicken stock. Everything he needed to make the arroz. No, he simply could not cook without the tomato-flavored polvo. To keep the peace, and to insure that comida was served en tiempo, I gave him the pesos for the seasoning. And, yes, the rice was muy sabrosa!

It is cumin grounds with peppercorn, which are all ground up to be quite fine....

You will find that it is called for in alot of the staple dishes...arroz, fideo, carnes guizada, carne azarda, carne con gravy, caldo de pollo, caldo de rez, so for and so on....

The secret ingredient is whatever the cook chooses to make it hence "secret". No such secret ingredient that can encompass ALL recipes.
