Two questions.
We live in Villa Nova, where is Ley's and Sorriana? Is it on the Carretera past Super Lake or?
Is Soriana the best place to buy Steak, or is their a local carneceria?

Never heard of Ley's, but Soriana is in Chapala. Go back toward Super Lake. at the lights on the Libriamento, take a left and follow the Libriamento at the end to the RIGHT off ramp to Chapala. Soriana is on your left. Stay in left lane and make a turn around. Watch out for oncoming cars at the light.

The BEST quality steak is at Costco USDA Choice, but if you're not going to Costco, I'm told that you can get USDA Choice in Soriana, but it must say so. I don't buy anything at Soriana. It's out of the way from West Ajijic. Your best hamburg (Ground Sirloin) is from Walmart. Their chicken is excellent too, same brand as Costco. Tony's has mostly Mexican beef, pork and chicken. Occasionally he has US Rib Eyes that he buys at Costco. Tony's and Costco's Arrachara is good.

I did not mean to patronize you.OK the best place to get good beef as near as Lakeside as one can get is New Orleans. If you are looking for great beef you moved to the wrong place. Not bad chicken, however. Lousy shellfish. Pork from hell.

Ley's is a northern Mexico store - we don't have one here. There is a new carniceria on the carretera in Ajijic, just east of El Sarape restaurant, on the lake side of the road - I have not tried it personally but it is getting good write ups - you might try them. Rosa who, I believe, owns it, speaks English, if that helps.

To get to Soriana the easiest way, take the libramiento out of Ajijic, going past the Pemex station - at the end take the Chapala turn off. Head downhill towards the lake - just before the traffic light, you can make a U turn and go back up the hill a very short way - Soriana is there on your right hand side. Walmart has all that Soriana does, and more, without the drive.

What this poster should have said is if you are looking for the hormone and chemical laden beef or pork with equally unhealthy amounts of fat that gringos have developed a taste for you are SOL. If you can appreciate leaner and healthier but equally flavorful cuts of either then there are places locally where it can be purchased.

In the first place, while your attitude has improved in the few years you've been here, you still revert back from time to time to that conceited gringo arrogance you brought with you.

Americans live 10 years longer? Yep, that is news to me. Did you apply that type of critical thinking and your New Age Alabama math skills to your job as a banker ?

Top quality, grass fed Mexican beef has as much flavor as the factory produced and adulterated, artery clogging carrion that you were accustomed to. It is just a different flavor. Same goes for the pork. Now if you want to argue that the local product doesn't taste enough like grease to please your sophisticated palate that is another story.

Just wait until your cholesterol level red lines and you're scarfing lipitor tablets like they were jewjew beans and you'll remember this amicable conversation.

I'll side with the Dawg on this; the beef is too lean and not aged, it comes to the butcher immediately after slaughter. The pork is way to lean which results in a tough flavorless meat. A little fat in the diet is a good thing and it improves the flavore of beef and pork immensely. The chickens are delicious. BTW, notice how fat the chickens are.

Then age it yourself if it doesn't suit you. But the northern Mexico beef is aged. If I am going to eat a steak, that is what it will be. We probably eat more pork than beef. It is never tasteless and rarely tough.

And you are correct. A small amount of fat is good. You don't get that with US beef and pork. You get too much and the NOB cardiologists in their Porsche 911T are grateful.

Lookee here, comedian Dawg: The folks ain't going to New Ahlans for something to throw on their barbie.
Susason, the store in the little strip mall in front of Telcel and the big Casino, on the frontage road. will probably fill their needs quite decently.

Then there's Costco meat, which isn't bad at all. If you can't wait, get some steak at Tony's and marinate the hell out of it. On the right of Superlake, on the main road through town.
Be sure to stop at Paz Liquors, to the left of Superlake and get some good booze in case the steak isn't any good. (grin)

Directions for the Newbies to Costco: (there are two ways; this one is less harrowing, IMO)

Drive west on the main road all the way through Jocotepec, following directions to Guadalajara. Once at the junction, go right and continue to follow signs to Guadalajara. Go past the big mall and keep your eyes out for the Costco sign on the right. Take the frontage exit and you'll find Costco, Mega and what more d'ya need?

Does the Dawg detect an uncharacteristic flexibility on the part of his historic nemisis El Benny, AKA Sr. Arce, who has been doubting The Dawg´s intellectual superiority for years. I must admit that Dawg loves French beefsteak which, like Mexican beefsteak, is lean and tough but quite flavorful especially when accompanied by a fine sauce bearnaise. The smart assed El Benny may have noticed where Dawg abides even though he has the election of living in Mobile or Burkino Faso should he desire to take those options. Now that El Benny has finished denuding the hillside forestlands of Chiapas he can concentrate on attempting to humiliate The Dawg but both endeavors are of no consequence. This is a cross Dawg must bear.

You are so FOS your eyes are brown. However, I do not understand why you, a man I consider to be astute in many ways, would propose that consumers eat the tasteless cardboard Mexicans ignorantly praise as "steak" over the far superior U.S. product. Holy crapola, people are going to think I hacked your account and posted under your name! I must take a screenshot to prove that the Dawg once did say that the U.S. does something better than Mexico.

Neil, that study concerns Hispanics in the U.S. and has been doubted by some. Overall the U.S. has a life expectancy about 2 years higher than Mexico. The U.S. ranks 38th so it is hardly the bar by which to measure. Although I think life expectancy is not all that reliable way of comparing relative health or health care.

If you can't drive to N.O. then Costco is the next best meat. I bought two rib eyes yesterday. A package of two. 0.925 kg. 245 pesos. Today I bought two rib eyes from Soriana package of two 0.560 kg. 95.14 pesos. Sorianas is Don Franisco premium, well marbled. The Costco USDA choice also well marbled. I have bought Wal-Mart and still will sometimes. It will be tougher and not as well marbled. Wal-Mart finishes 3rd or less. I also watch Wal-Mart for their promotions on ground beef and buy about a half cart full which feeds my family and our Assisted Living Home and all the help. These are our choices in this area.

Mexican cattle eat rocks here and the meat is equally as tough.

I usually put some of my favorite sprinkles on them at least 3 or 4 hours before I grill. I heat my grill for at least 30 minutes to get it as hot as it will get. Then I sear them till they are lite pink but warm in the center.

If you think a piece of meat has too much fat you can trim it before cooking. A good butcher will do that for you. Where would one buy "Aged Northern Mexico Beef?"

Thanks to the people who gave an informative answer. We are here for 3 months,love Ajijic, and apppreciate your help.And to the others it is so sad you choose Mexico to retire. We have been to many parts of Mexico for the past 9 years and don't expect USA standards... whatever that is!! Perhaps you should go back.

Of course the meat dehydrates. That is what happens when you dry age beef. The stuff in NOB supermarkets isn't dry aged, it is wet aged. They bundle it in plastic and let it slow rot for awhile. I grew up on a small farm. We sent 20 to 30 head of cattle to slaughter every year. Back then it was all dry aged.

Wrap a piece of beef in some cheesecloth and put it in your refer for a few days. Then you have dry aged beef.

A "Best Steak" discussion is no different than a discussion of the Best Of: chicken, pork, Tequila, Scotch, Bourbon, wine, beer or for that matter any recipe. The main difference between edibles and liquids is that there is a cook, who may be of questionable talent.

You have nailed it. It may be the reason there are so many grumpy people around here, when they should be grateful that luck, fate or necessity landed them in a beautiful place, and that they have enough pesos in their pockets to buy meat. So, it's not up to their NOB standards. Big deal. Pound it, marinate it, slice it thin or whatever it takes. Or get on a burro or an airplane and head for your fave NOB establishment.

Sometimes the restaurant reviews are hilarious in their comparison to top level dining establishments in the big cities NOB. This is a small backwater of the world, and I'm happy that we have decent eateries. And edible, if lean, steaks.

Make yourself some butter - herb butter, garlic butter, onion butter, cilantro butter, parsley butter - and plop a piece down on that lean steak. Makes a difference.

Mexico has meat and plenty of it. So some things are different and that's just the way it is, you adjust. If you got to beat your meat then that is what you do. Of course some will never be satisfied.
