Hola Grace, I hope this is what you are looking for. Mole de olla 3 lb. boneless lean beef cut into 1 1/2 in. cubes 1 beef shank with bone 8 c. water 1 tbsp. salt 1 sprig epazote 5 cloves garlic 3 chiles anchos 2 chiles pasillas 3 tomatoes 1/2 onion 3 tbsp oil 1 chayote peeled and cut into 6 pieces 1 lb. zucchini cut in chunks 2 ears corn, each cut into 3 pieces 4 oz. green beans Place the beef and beef shank in a large pot,add the water and bring to a boil.Add the salt,epazote and 2 cloves of the garlic. Cover and cook over medium heat for 45 min. While the meat is cooking toast the chiles, remove the seeds and membranes and place the chiles in a blender. Roast and peel the tomatoes. Add the tomatoes to the blender along with the onion and 3 remaining cloves of garlic. Puree. Heat the oil in a large skillet and add the puree. cook over medium heat, stirring constantly for 5 min. Add the puree to the pot containing the meat.cook covered over low heatfor 30 min. Add the chayote and cook for 10 min., then add the corn, zucchini and green beans and cook covered over low heat for 10 min. or until tender. Enjoy, Gran
