I was first looking to find what hominy is .... then I see it used with posole in Mexican recipes. I have a feeling it is corn but must be a different kind because it is so large. Maybe boiling dried kernels of corn makes them pop like pop-corn?

I'd really like to know!

Hominy (posole) is just blanched corn kernels, que no?

I don't know about dried posole... but making (non-dried) posole (hominy) is a 2 day affair. It involves boiling maiz with cal (the chalky lime that is sold in Mexican mercados). After boiling until the corn softens and the skin is loosened you wash it in ways to get rid of the skin and little nubby things... well it's a big procedure.
Better to buy the kind in the can ;-)
