We have a newly opened Mexican restaurant in our area. I am in Michigan -- but they do have all Mexican staff, waiters, cooks, etc. ???
They have a dish my husband and I both love -- Quesadillas de Camaron. It's grilled flour tortillas filled with shrimp, green peppers, onions, tomatoes, and some kind of cheese?
Anyone know what the cheese is?
Any help would be appreciated. I did ask our waiter but apparently didn't want to divulge the info.!

If it's oaxaca cheese then maybe you can try using mozzerela. I live with some oxacenos and that's what they buy in place of 'quesilla' which is the real name it's called in oaxaca. They prefer mozzarela as a substitute even over the packaged brand sold in the u.s. under the name 'queso oaxaca'.

I don't know if its Chihuahua cheese BUT chihuahua cheese is a cow's milk cheese and can also be called "asadero" or "oaxaca" cheese; similar to an unaged monterey jack cheese.

I will say that you should try a good Monterrey Jack. I use it in my mexican cooking here in Calgary, it's very good for quezadillas!

i have one recipe of quesadillas de camaron, you need 3/4 kilogram of camaron, 1 branch of epazote, oil, 1 medium onion cutted in small pieces, 2 guajes tomatoes cutted in small pieces, 4 chiles serranos cutted in small pieces, 1 kilogram of masa, salt.
First clean the camaron, boil it and cut it in small pieces (without skin of course), fry the camaron, the onion, the tomatoes and chile in oil (3 spoonful)until all gets dry (in a low fire). Do 16 small balls with the masa, with each one do a tortilla and fill it with the mix of camaron. Made a quesadilla and close the borders, fry the quesadillas in very hot oil. You can eat them with a salsa (very hot of course), and avocados. I hope you can get all the ingredients, ¡¡¡buen provecho!!!
