For the salsa roja you have to cook 2 chiles serranos and 2 chiles de arbol, then clean they skin and grind very well with 4 fresh tomatoes, 1 garlic and salt. If you want you can fry the salsa, it tastes much better. For the salsa borracha you have to boil 3 fresh tomatoes and 1 cleaned chile pasilla, when its cooked grind very well. After that fry the salsa and add a bit of pulque (a mexican traditional beverage) let it boil and add salt. The secret for a really delicious salsa or mole its grind the ingredients in a molcajete (if they are wet) or in a metate (if they are dry).
