How far back does scratch go? To grinding corn? Or just to purchased masa?

Here is a picture story about making gorditas from fresh masa from the neighborhood tortillera.

Here is another about making sopes from dry maseca.

In both cases, the principal is the same for making tortillas.

it was from scratch from soaking corn like is it just water ? I think they use something in the water

I would suggest, that if you want to make tortillas "from scratch" you eliminate Part 1 of Rollies wonderful step-by-step pictoral essay and go to the store and buy however many kilos of "maiz cocido" (I THINK that is what it's called) in the one kilo packages in the dairy cooler and go directly to Part 2 of the pictoral. Although some might think that it is cheating, it gets you past the pure drudgery of Part one.

Even when my suegra makes posole or menudo, she takes this easy shortcut when the quantities to be prepared are less than neighborhood size. Just don't forget that that first step of cleaning the nixtamalized kernels by washing (several times) the lime water off of them. If you don't do this you will have some very strange flavored tortillas, tamales, posole or menudo.

Now, folks in Mexico don´t in Dawg´s experience, normally make tortillas from scratch except at periodic fiestas which is why there are so many totillerias selling dirt cheap tortillas in any Mexican town one visits.

It is Dawgs opinion that the best tortillas, made with roughly ground yellow corn, are to be had in Merida, Yucatan. In San Cristóbal de Las Casas, Chiapas, where Dawg lives about half the year, about 60% of the storefronts making and dispensing tortillas were found to be using impure water or masa and were, therefore, selling tortillas that could rot your guts. This according to the local press after having performed research. Ah, Mexico, the land of surprises.

If you are seeking peace of mind in beautiful Chiapas, do not read the local press.

dawg too funny because it was merida that I had my first real corn made tortillas wow they where great
it was a the locals resturant in a small town just outside of merida in a town that has a ruin right in the middle of it I dont remember the town but the resrurant was great

We consider Yucatecan food to be the best in Mexico - perhaps the best in North America. We love their tortillas.
