Bolillo salado sliced lengthwise, spread with a layer of refried black beans,another layer of authentic Mennonite Chihuahua cheese. Place under broiler to melt cheese. Top with salsa picada (con mucho chile verde) and slices of aguacate.

That will hold me for awhile!

Yummmm! Molletes! I make molletes for breakfast once or twice a week. In Los Altos de Jalisco we use Frijol Peruano and chlie de molcajete. :)

I like molletes with refried beans and oaxaca chesse, and with a lot of pico de gallo salsa ;)

Here's the recipe for pico de gallo salsa:

How to prepare Rooster’s Beak Salsa Ingredients
1 teaspoon olive oil
1 / 2 medium onion
4 medium tomatoes
5 sprigs cilantro
2 serrano peppers
1 pinch salt
1 lemon Preparation
1. Chop the onion finely and add lemon juice, marinate for 15 minutes.
2. Cut the tomatoes into small cubes and finely chop chiles and cilantro.
3. Add all the onion and oil and salt.
4. Mix together and ready.
