Today I was treated to Adriana's version of pescado zarandeado con camarones. It differers quite a lot from the classic recipe, but it sure was fine eating.

Let's see - no oven and what appears to be a two burner cooktop. Rolly must have been a Boy Scout in a previous life. At least camping out, we always had a reflector oven.

No oven because there is no room for a stove. My kitchen is 2M x 2M. When I lived in LA, I had a large kitchen and a stove with a double oven. I had the tools for a 40-person sit down dinner. When I moved to Lerdo, I left all that behind. No more diner parties at my house. I'm retired from the party scene.

My wife and I tackled this recipe over the weekend, and the result was fine indeed. We couldn't find either of the Tone's spices locally, even at Sam's Club (in Knoxville, TN), so we had to substitute some equivalent spice mixtures, and we substituted half-and-half for the heavy cream just to lower the calories a bit. Also, we followed Rolly's recommendation and sauteed the onions with a green pepper before adding the onion layer.

Thanks to Rolly and Adriana for the fine recipe! The final dish was muy bueno accompanied by a cool Dos Equis.
