Hi everyone I am an enthusiastic amateur cooker of food. My interests tend to be widespread, and I like to start with a good recipe, try it once and go from there. We stay stateside for the holidays every other year for now, and this is one of those years. I tried a Rick Bayless red mole recipe yesterday, a test batch. It passed the test. I'll be making it for guests on Boxing day. I think I will make it un poco mas picante by adding something, maybe some chipotle en adobo. We'll see. I wrote a little about it here. I invited a young chef friend, the youngest exec chef at a Portland fine dining restaurant to try it out and give me some advice. He did that.
