Chicharrones

While in this huge mercado in Oaxaca City we happened upon una senora selling a verity of chicharrones.. I’m going to do my best in describing them because she sold us a particular chicharron, that was moist, dark burnt reddish in color and looked greaser then the real dry ones normally bough. They had real nice pieces of crunchy meat that were a delight to eat.

I am going to try to find these in our local tienda Mexicana tacoria /carnecería / panadería. Any ideas what these savory chicharrones maybe called other then just the generic chicharrones?

Sorry not to have answered you before. They're just called chicharrones, Oscar. Most of the chicharrones that are sold outside Mexico aren't like these. They don't have either the color or the little square of meat still attached to the fried skin. Like you, I like these meaty ones the best.

Could it have been "carnitas"? They're not really crunchy, but sound like what you described. A picture would help in identifying! :D

I'll take a picture at the tianguis and post it here later in the week. This kind of chicharrones--these are not carnitas--is quite common here in Morelia, as well as in Guadalajara and many other places in Mexico.

Here they make cicharrones and chicharrones con carne the latter has meat attached
