While in this huge mercado in Oaxaca City we happened upon una senora selling a verity of chicharrones.. I’m going to do my best in describing them because she sold us a particular chicharron, that was moist, dark burnt reddish in color and looked greaser then the real dry ones normally bough. They had real nice pieces of crunchy meat that were a delight to eat. I am going to try to find these in our local tienda Mexicana tacoria /carnecería / panadería. Any ideas what these savory chicharrones maybe called other then just the generic chicharrones?
