Guayaba jelly/mermelada?

I need recipes for my bushels of guayabas. If someone has a jelly recipe--do they sell sure-gel in Mexico? Maybe I don't need it.

They will make jelly quite well without any "magic". Fruit, Sugar Water. I overcooked the juice and sugar to make a nice rubbery product once. Add water to the fruit to where you can see it between the fruits (use some underripe fruit, simmer for a 1/2 hour or so, strain in a jelly bag-I use new cheap Knee High hose and throw out. Use 3/4 to 1 cup sugar to each cup of juice and cook to jelly stage.

If you end up with more of an ate than a jelly it makes a nice glaze on meats.

What you want is pectina, if you need it. We buy it at a bakery supply store here in Morelia. It's not cheap.

A recipe from Africa: http://www.african-recipes-secrets.com/guava-jam.html, The recipe doesn't call for pectin.

You can also make ate de guayaba, which will use more of your guayabas than the jam. You won't need pectin for this recipe, either.

This will be what I need--we don't have such a store in Irapuato (at least that I know of).
