About 10 days ago, I was at the UNAM (Universidad Nacional Autónoma de México) to attend a symposium about quelites, the wild (and occasionally cultivated) greens of Mexico. It was an extraordinary day that included many fine talks plus a full degustación (tasting) prepared by some of the best chefs in Mexico City. The link to the article is below.
