This might be an interesting video series for any into obscure food plants, with some of these found along western coastal Mexico and others possibly seen in other regions. Similar plant descriptions from knowledgable Mexicans would be even more interesting. Of several curanderas we know most have patios with dozens of plants, many of which I've never seen elsewhere and don't know the use of. Have others here had a chance to source plant knowledge from some of the local doñas naturistas?

The 'quelites' most common here in Mazatlan are lambs quarters and grow on every vacant lot and road side after the first spring rains. Some local families eat them as boiled greens but we find them best steamed with a bit of butter, salt and pepper and vinegar added before serving or fried with a bit of bacon. Much better than spinach imo even in salads.

My favorite way to eat quelites is sauteed in a bit of oil, then briefly simmered in a thick sauce made of tomato and onion sauteed until extremely soft. Served with beans, crumbling cheese, and warm tortillas. Yum. I'm starting to feel sorry I decided to cook Korean tonight.
