Yuca recipes

I did the search but couldn't find any recipes here for yuca (cassava), but it is listed on several websites as one of the staple root vegetables of Mexico. Here's a recipe that we've used fairly often but I think it is more of a Cuban or Caribbean style preparation;

Yuca con Ajo, or Yuca con Mojo;

Clean several yuca roots by removing the outer bark type layer, chop into chunks, boil like potatoes and remove any woody fibers after cooking. Mash the cooked yuca chunks with salt, white pepper, and with butter or olive oil previously heated with pressed garlic. Yuca con Ajo is one of our favorite mashed vegetables and much better than mashed potatoes imo.

Any other yuca recipes in use by folks here? Thanks.

Search for yucca; I found several recipes and a variety of other articles.

Thank you, yes there are several other recipes under that spelling. I suppose most anything that can be done with potatoes or sweet potatoes should work equally as well for yuca, including scalloped yuca.
