Taco Recipe Help Los Mochis, New Mexico

I worked at a Bottling Plant recently, well a few years ago in Portales, NM and this lady would drive to the plant and sell taco's out of her car. their were taco's in green sauce, and taco's in red sauce, I believe it was pork, but they were so good. they would be wrapped in aluminum foil, and basically consisted of a flour tortilla, and the ingredients.

Would anyone know what type of recipe these would consist of? the red and green sauce?

Appreciate any help

They're both simple tomatillo-based salsas. The green one usually consists of boiled or roasted tomatillos with the skins removed, onion, garlic, cilantro, serrano chile, salt, and optional lime juice to taste. The red sauce is basically the same thing with dried red chile de árbol instead of fresh serranos.

Couldn't the red sauce (salsa roja) be made from fresh tomatoes and chiles, either fresh or dried?

To the OP:, since none of us were actually there, it's hard to guess what exactly they were! :-)
