I'm in search of a recipe for a Yucatecan dish I had about 10 years years ago at Luchita's restaurant in Cleveland. I got the name from them but I can't find anything on the web. The dish is Camarones a la Xanathe. At least that's the spelling they gave me - Xanathe - I wonder if it's correct. Anyway, the dish was a stew-like dish of shrimp and potatoes and it was flavored with vanilla. I don't recall the other ingredients but it was mainly shrimp and potatoes. I was intrigued by the idea of using vanilla in a savory dish. I have experimented on my own a couple of times adding it to a couple of chicken dishes. But, I digress . . . . I'd love to find a recipe for this dish. I hope someone here can help me out.
