It was a bit chilly in Lerdo this morning which made it a really good day to go to Adriana's house for albóndigas soup. As usual, I ate until I could hardly waddle home.

Rolly, I hate you for posting this and making me hungry for albóndigas when I don't have any ground beef in the house! Caray, I guess I'll have to go buy some, and I just got home...

I had a bowl of the soup for breakfast this morning -- fine way to start the day.

Next week I'll tempt your taste buds again. Adriana, Nery and I are working on a real show stopper Barbacoa story. Early this morning Nery and I went into the desert to harvest some maguey leaves for the barbacoa.

Also this morning I got a commitment from a little Mom and Pop cheese factory to do a picture story on them. No date set yet, maybe next week.

Hmmm...I made the meatball soup and it came out terrific. It was one of those things I just couldn't wait to do, so I ran out to WalMart, rounded up some meat and vegetables, and sat down to a great meatball soup around 11:30. PM. Better late than never.

I'm looking forward to the barbacoa story. I'm sure it will be excellent, as always. Your photo stories make everything come to life. Oh, and you are SO toast. Yes, again. This time because I have no way to get maguey leaves in the middle of Oklahoma, and you're making me hungry, as always.

My compliments to Adriana. Her albóndigas recipe made enough to feed an army, so I'm carting the tasty leftovers out to New Mexico to feed my hungry, newly single dad. He'll appreciate it.

It may not be as hard as you think to find maguey leaves in your neck of the woods. The Americanized name for maguey is century plant, and they are pretty common in the Southwest.

They abound in New Mexico where I grew up. Out here it isn't desert enough for them, unfortunately.

Ah, for the good old days. Maybe if I lived in the Panhandle. Eastern Oklahoma is more like Arkansas than Los Angeles in climate...grrr.

I mentioned several weeks ago that I had bought a pressure canner and was putting up meats to use at the ranch, where I have no refrigeration. So far we have canned beef, chicken breasts, lamb, mutton, and cabrito. I have begun using what I put up and so far I haven't poisoned either myself or my husband and the meats taste delicious, so I have been trying to think of what else I might can.

Albondigas are perfect! One day's work will yield at least 7 quarts of meatballs, and I can use either broth or tomato juice for the canning liquid. Once I get them done I will never again have to wait when a sudden craving comes down for albondigas soup! (As has just happened when I read this post.)

Hi Carron, in your non-electric household I was wondering if you've looked into evaporative cooling refrigerators similar to Zeer pots or others?

Zeer pots are pretty basic but I've seen more advanced designs for square evaporative refrigerators with doors and automatic water level systems from India I think.

Thanks for the suggestion. I am going to look it up right after I answer your post.

When we moved to the ranch, our first purchase was a solar oven (cost a very expensive $150 for what we got). It was touted as the cure to all of Africa's firewood problems. Made of insulated recycled plastic, it didn't hold up more than a couple of weeks. The first damage was from an angry mama raccoon who threw some can goods from my pantry down onto it and broke off a big chunk of the cooking box. In actual use it was subject to peeing dogs, curious goats, and a horse who kept kicking at the lid. It actually cooked pretty well, but didn't last in the "real world".
