Recipe for Mancha Manteles??

Several years ago I made a not-very-authentic version which I made up myself but nevertheless tasted pretty good. I am thinking of doing it again for a holiday meal this year and would like to try something more traditional (I remember using prunes as some of the fruit and I will probably repeat that part) but the recipes I have found in my cook books are way more work than I am willing to get into, having neither a molcajete nor a blender. Any suggestions?? Maybe along the lines of using Dona Maria's Mole as a base?

Rolly, as for the stain on the shirt - my Hispanic friend in NM would say you are flying the Mexican flag. LOL!!

Thanks, Rolly! I am truly inspired. The photos are especially helpful. In lieu of the blender thing I may just improvise (after all, we ARE in Mexico!) and work out a combo of Dona Maria's bottled Mole and canned chipotles, which I love. And I will substitute piernas de puerco for the loin.

I will post a critique of my results.
