Chicken Tinga recipe?

Does anyone have a great chicken tinga recipe that they could share? I am looking to do stuffed poblanos with chicken tinga and I want it to taste really authentic.

Also, what kind of sauce (if any) should I serve with it? I was thinking maybe it just needed a little crema, but maybe a sauce as well...

Yeah, I have been checking them out as well - but the recipes are so varied - some with vinegar, some with chipotle, or oregano, or cloves, one with ketchup! I am not sure which is more authentic, if there even is such a thing.

I asked my boyfriend to ask his mom, and we'll see what she comes up with. If it seems good, I will put in in this post.

JulietM; "My Mexico", by Diana Kennedy, page 258: Tinga de Pollo, a variation as made in Tulancingo.

It has chorizo, white onion, garlic, finely shredded cabbage, plum tomatoes, canned chiles chipotles in adobo, sauce from the chipotles, chicken broth, shredded chicken, optional avocados, salt.
