Since I'm not a soy fan, I can't say that I've looked for soy products, but I have seen soy milk just about everywhere in Morelia, along with tofu and soy "meat" products. And I've seen Lactaid pills at Costco and other stores. In the last 20 years, the food landscape in Mexico has changed incredibly. Products that weren't on the shelves now are. But still missing are: Indian spice mixes Fresh cranberries (except in the rarest of Estadounidense outposts) Candied ginger Just before the move and for about a year after moving here, you'll make an effort to have Care packages delivered by visiting friends or load up on the impossible-to-find stuff when you go to the states, then you'll figure out substitutes, and by the time you reach the point of just no longer caring, the stuff will end up on the grocery store shelves.
