More good food from the kitchen of my friend Adriana Rosales.

Lunch was a very delicious Pechugas con Queso, chicken breast stuffed with ham and cheese. The chicken was adorned with Salsa Chile Verde con Queso, a salsa of green chiles and cheese. Dessert was fried Plantainas.

The chicken was outstanding and the salsa was a very tasty accompaniment. I was a bit underwhelmed by the plantainas.

Rolly - the seasoning she is using is something she buys - right? Do you have the brand name?

She uses items from a company called Tone's who makes a large line of different seasoning combinations. They are sold at Sam's, and probably in other stores.

plátano = banana

plantaina = those banana looking things. In English, plantain. This what Adriana calls them.

As is my usual habit, I did a lot of googling before writing the text for the stories. I found that the two names are sometimes used interchangably causing confusion.

The plantain is usually called plátano macho. They're delicious fried.

I've never heard plantaino, but your mileage obviously varies. Ask Adriana sometime if she ever says or hears plátano macho.

Well, Christina, you have sent me on an interesting quest.

Is it Plantaina or is it Plátano Macho, or is it both?

My search of the internet shows a preponderance, but not unanimity, for Plantaina.

The sign on the display at my Soriana says Plátano Macho.

A quickie survey of friends and family finds some use one, some the other. Two people voted for both names.

So to cover all bases, I have edited my webpage to include both names.

But I don't agree with your delicious description. I can give them only an OK.

Maybe Adriana made what we call tostones. Tostones are green to greenish yellow plátanos machos, sliced about 1/2" thick and smashed with the side of a knife or the bottom of a heavy bottle. The smashed slices of plátanos machos are then fried till crispy and golden brown, then salted to taste. They're so-so, IMHO.

Very, very mature plátanos machos are a whole other story. When the peel of the plátano macho turns dark black--some mold on the outside is actually desirable--the plátano is sliced on the diagonal, about 1/4" thick, and fried until golden brown and soft. IMHO, there's nothing better.
