Can someone tell me what the Mexican equivalent of dry curd cottage cheese (farmer's cheese) would be? I asked one gal and she thought it was requeson, however requeson is ricotta and that is too moist and not aged as long as dry curd cottage cheese, it also is prepared with the addition of crema. I have dietary restrictions and many of the recipes call for dry curd cottage cheese so I must be careful when selecting a replacement cheese.
