Up By The Roots: Raz de Chayote en Salsa Colorada

I have updated my Mexican Kitchen blog to describe a regional dish of Chayote roots, battered and fried, then simmered in red chile sauce; as made by a local restaurant, our neighbor, and by me.

Once, was bequeathed a large basket of freshly dug chayote roots.

Recipeless(is that a word?) and somewhat daunted.
Passed the basket on to another family.
