In search of ricotta

I'm at Lakeside (Chapala) and planning on making a lot of veggie lasagna. SuperLake has Sargent ricotta (or at least they had a couple last week) and also Borden's cottage cheese (which I have never used in lasagna, as you can tell from my waistline). Not sure if I can get ricotta at Costco or Wal*Mart in Guad.

My question: Is there a Mexican cheese that will make good lasagna? A prior post mentioned herbed requeson in appetizers, and while I like that stuff, I am not sure whether that would melt right OR taste right to lasagna lovers. Looking for local options.

Requesón is what I always use in lasagna. It's the perfect substitute for ricotta.

Normally I mix a beaten egg or two into the requesón and use it just the way I always use ricotta. Delicious.

Thanks, Esperanza! Now I can try the requeson without fear of an inedible mess on my hands. I like to use a beaten egg mixed in the cheese filling also.

Actually, I've had greater success using requesón than some inferior brands of ricotta, NOB.
