Mexican avocado smoothie: Licuado de aguacate by Karen Hursh Graber © 2012

This is a basic recipe for a Mexican avocado smoothie. Feel free to add banana, strawberries, or even apple, and to substitute soy milk for regular milk. It's a great way to start the day with the generous dose of vitamins contained in avocados, the calcium in the milk and the probiotics in the yogurt.

Ingredients

  • 2 cups milk
  • 1 ripe avocado
  • ½ cup plain yogurt
  • 2-3 tablespoons honey or agave nectar
  • Ice if desired

Place all ingredients in a blender and liquefy until smooth. Serve in tall glasses. Makes 2 generous servings.
