Mexican custard dessert: Natillas by Karen Hursh Graber © 2009

This simple, classic Mexican dessert, based on a Spanish one, can be made with just a few staple ingredients found in any fridge and pantry.

Ingredients

  • 4 eggs, separated
  • ¼ cup flour
  • 1 quart milk
  • ¾ cup sugar
  • pinch salt
  • cinnamon or nutmeg for sprinkling on top

In a bowl, combine the egg yolks, flour and 1 cup of the milk. The mixture will be pasty.

Pour the rest of the milk into a saucepan, add the sugar and salt, and bring to a scald over medium heat. Add the egg yolk mixture and cook stirring, until a custard is formed. Remove from heat and let cool.

Beat the egg yolks until stuff, fold into the custard, refrigerate until chilled. Serve in individual cups, sprinkled with cinnamon or nutmeg. Serves 6.
