Mexican Style Eggs: Huevos a la Mexicana by Ana María Flores Sánchez © 2006

Serves 2

Ingredients:

  • 4 eggs
  • 1 medium sized tomato, washed and diced
  • 1/4 onion finely chopped
  • 1 or 2 serrano peppers, chopped
  • 1 Tbsp. butter
  • 1 Tbsp. oil
  • Salt to taste

Preparation:

Melt the butter with the oil in a deep skillet, add the onion and the peppers and sauté until the onion is translucent. Add the tomato and the eggs, stirring constantly to prevent sticking until the eggs are done. Season to taste with salt.
