Date and walnut roll: Rollo de datil y nuez by Karen Hursh Graber © 2006

This is a very easy sweet to make, requiring few ingredients. The minimal cooking time makes it a good project to make with children during vacation time, provided that young children are supervised around the stove.

Ingredients:

  • 1 cup milk
  • 3 cups sugar
  • 1 pound seedless dried dates, chopped
  • 2 cups chopped walnuts
  • 1 teaspoon vanilla extract


Place the milk and sugar in a large saucepan, stir, and cook for 3 minutes. Add the remaining ingredients and continue to cook, stirring constantly, until the bottom of the pan can be seen when the mixture is stirred.

Remove from heat and allow the mixture to cool. When cool, spread the mixture in a rectangular shape on a large piece of wax paper.

Using the wax paper as a help, roll the mixture into a log. Cut into slices of the thickness desired. Makes 8 thick slices, or more thin ones.
